Orta Asya&#8217;n\u0131n g\u00f6\u00e7ebe mutfaklar\u0131ndan Bizans&#8217;\u0131n &#8220;plakous&#8221;lar\u0131na, Osmanl\u0131&#8217;n\u0131n zengin sofras\u0131ndan g\u00fcn\u00fcm\u00fcz\u00fcn kahvalt\u0131 tabaklar\u0131na uzanan bu hik\u00e2ye; sadece bir yeme\u011fin de\u011fil, ayn\u0131 zamanda ortak bir k\u00fclt\u00fcrel belle\u011fin \u00f6yk\u00fcs\u00fcd\u00fcr. Ancak son ara\u015ft\u0131rmalar b\u00f6re\u011fin k\u00f6kenini, 7. y\u00fczy\u0131ldan \u00f6nceki Orta Asya g\u00f6\u00e7ebe T\u00fcrklerine dayand\u0131rmaktad\u0131r. G\u00f6\u00e7ebe ya\u015fam tarz\u0131, Orta Asya&#8217;da ince hamur i\u015flerinin ve yufkan\u0131n yayg\u0131nla\u015fmas\u0131n\u0131 sa\u011flam\u0131\u015ft\u0131r. Uygurca yaz\u0131lm\u0131\u015f metinlerde, bu co\u011frafyada hamur i\u015fleriyle ilgili baz\u0131 ipu\u00e7lar\u0131na rastlanmaktad\u0131r. Her ne kadar bu metinlerde do\u011frudan b\u00f6rek tariflerine yer verilmese de hamur i\u015flerinin \u00f6nemli bir yere sahip oldu\u011fu ve halk mutfa\u011f\u0131n\u0131n bu t\u00fcr g\u0131dalarla zenginle\u015fti\u011fi anla\u015f\u0131lmaktad\u0131r. Bu pratik y\u00f6ntem, ayn\u0131 zamanda Orta Asya&#8217;daki &#8220;yufka&#8221; k\u00fclt\u00fcr\u00fcn\u00fcn de temelini atm\u0131\u015ft\u0131r. Orta Asya\u2019dan gelen bu gelenek zamanla Anadolu\u2019ya, Sel\u00e7uklu mutfak k\u00fclt\u00fcr\u00fcne ve ard\u0131ndan Osmanl\u0131 \u0130mparatorlu\u011fu\u2019na yay\u0131lm\u0131\u015ft\u0131r. 7. y\u00fczy\u0131l\u0131n ba\u015flar\u0131ndan itibaren T\u00fcrk halklar\u0131, en sevdikleri hamur i\u015flerini de yanlar\u0131na alarak Orta Asya\u2019n\u0131n bat\u0131s\u0131na do\u011fru g\u00f6\u00e7 etmeye ba\u015flam\u0131\u015f; birka\u00e7 y\u0131l i\u00e7inde Sibirya\u2019n\u0131n b\u00fcy\u00fck b\u00f6l\u00fcm\u00fcn\u00fc kontrol alt\u0131na alan G\u00f6kt\u00fcrkler Aral Denizi\u2019ne ula\u015fm\u0131\u015f, Hazarlar Kafkasya\u2019ya yerle\u015fmi\u015f ve b\u00f6re\u011fi bu co\u011frafyalara ta\u015f\u0131m\u0131\u015flard\u0131r. Bosna\u2019da \u201cburek\u201d ad\u0131 verilen versiyonu, spiral \u015feklinde sar\u0131larak et, \u00e7\u00f6kelek, \u0131spanak veya patatesle doldurulmu\u015ftur. Girit\u2019e \u00f6zg\u00fc \u201cbureki\u201d ise kabak ve beyaz peynirle haz\u0131rlanm\u0131\u015ft\u0131r. Tatar mutfa\u011f\u0131ndaki \u201c\u00e7i b\u00f6rek\u201d, kuzu eti, so\u011fan ve baharatla doldurulmu\u015f g\u00f6zlemeye benzemektedir.
